Buko Salad: Young Coconut in Sweet Cream
Buko salad is young coconut meat cut into strips and mixed with nata de coco, kaong and pineapple in a sweet, creamy dressing of condensed milk and table cream. Served ice cold, it is soft, chewy and refreshing.
About Buko Salad
Buko is the young coconut, and its tender, almost jelly-like meat is the star of this salad. Filipinos have long scraped it out of the shell with a spoon and eaten it with the water, and buko salad is that same treat dressed up for a party.
The salad is part of the Christmas and fiesta spread, together with fruit salad and macaroni salad, but it is also the easiest to make at home. There is no cooking at all: you scrape, mix, chill and serve.
Ingredient notes
- Young coconut meat: scrape it from 4 to 5 buko, then cut it into long strips. Pick coconuts with soft, thick meat; hard meat means the coconut is too mature.
- Nata de coco: chewy coconut gel cubes, sold in jars. Drain and rinse them well to remove the syrup.
- Kaong: sweet palm fruit, sold in jars. It adds color and a soft bite.
- Condensed milk and all-purpose cream: the dressing. Together they are sweet and creamy without being heavy.
- Buko water: a splash of the coconut water in the cream loosens the dressing and adds flavor.
Tips for the best Buko Salad
- Drain everything. Pineapple, nata de coco and kaong carry syrup that will thin the cream. Drain them in a sieve for 10 minutes.
- Chill the cream and the fruit. A cold salad stays thick.
- Mix gently. Fold; do not stir hard, or the coconut strips break up.
- Chill 4 hours. The salad tastes best when the flavors have had time to blend.
What to serve with Buko Salad
Serve cold in small bowls or glasses on its own, or alongside Leche Flan and Mango Float for a full dessert table.
Variations and substitutions
- Buko pandan salad: add pandan jelly cubes. See Buko Pandan Salad.
- With cheese: fold in a handful of cheddar cheese cubes for a salty edge.
- Less sweet: use half the condensed milk and a splash of buko water.
- Add fruit: diced apple, grapes or ripe mango are common additions.
Storing and reheating
Cover and refrigerate for up to 2 days. The dressing thins out as the coconut gives off water, so give it a stir before serving.
Frequently asked questions
Can I use bottled or frozen buko?
Yes. Frozen strips, thawed and drained, work well when fresh young coconut is hard to find.
What is the difference between buko salad and fruit salad?
Buko salad is mostly young coconut with a few extras. Fruit salad is built on canned fruit cocktail.
Why is my buko salad watery?
Too much syrup or coconut water. Drain the add-ins well and use cold, thick cream.
