Pork Barbecue: Sweet Grilled Skewers

Pork barbecue is a Filipino street-food classic: thin slices of pork marinated in a sweet-savory mix, threaded on bamboo sticks and grilled until charred at the edges. Served with spiced vinegar.

About Pork Barbecue

Filipino pork barbecue is thinly sliced pork threaded on bamboo skewers and grilled over coals. The marinade combines soy sauce, banana ketchup, citrus and sugar for a sweet-savory, lightly charred bite. It is a staple of street food stalls, neighborhood grills and weekend gatherings.

The secret is the marinade and the basting. The pork soaks in the sauce for hours, and then more sauce is brushed on as it grills, building a sticky glaze with caramelized edges. Skewers are traditionally served with garlic rice and spiced vinegar for dipping.

Ingredient notes

  • Pork shoulder: has enough fat to stay juicy on the grill. Slice it thin against the grain.
  • Banana ketchup: sweet, fruity and the signature of the glaze.
  • Calamansi or lemon: brightens and tenderizes.
  • Lemon-lime soda: optional, but its sugar and acid help tenderize and glaze.

Tips for the best Pork Barbecue

  1. Slice thin. Thin slices cook quickly and absorb more marinade.
  2. Marinate long. At least 4 hours; overnight is best.
  3. Boil the basting sauce. Simmer leftover marinade so it is safe to brush on cooked meat.
  4. Grill over moderate heat. The sugar burns over a very hot fire.
  5. Turn and baste often. This builds the glaze.

What to serve with Pork Barbecue

Serve with garlic rice and a dip of vinegar, chili and onion. Fresh tomatoes and cucumbers on the side are common.

Variations and substitutions

  • Chicken barbecue: see Chicken Barbecue.
  • Oven version: broil on high for about 15 minutes, turning once.
  • Spicy: add chili flakes or sliced chilies to the marinade.
  • Pork belly: use thin belly slices for a richer bite.

Storing and reheating

Refrigerate cooked skewers for up to 3 days and reheat on a grill pan. Marinated raw pork can be frozen for up to 2 months.
