Daing na Bangus: Marinated Fried Milkfish

Daing is milkfish butterflied, marinated in vinegar, garlic and pepper, then fried until the edges are crisp. It is a Filipino breakfast standard with garlic rice and tomatoes.

About Daing na Bangus

Daing na bangus is milkfish split open, marinated in vinegar, garlic and black pepper, and fried until the edges turn crisp and golden. It is a Filipino breakfast staple, usually eaten with garlic fried rice, tomatoes and a dip of spiced vinegar. Bangus (milkfish) is often described as the national fish of the Philippines and is farmed in ponds across the country.

The marinade does two jobs: the vinegar firms and seasons the flesh while the garlic perfumes it. Because milkfish is a rich, slightly sweet fish, the acidity balances it nicely. The same marinade, left longer, is how daing (dried fish) was traditionally preserved.

Ingredient notes

  • Butterflied, deboned milkfish: ask your fishmonger to prepare it, as the many fine bones make it difficult at home.
  • Cane vinegar: gives a clean, mild tang; it is the classic choice for daing.
  • Garlic and black pepper: the traditional flavorings, used generously.
  • Salt: seasons the fish through the marinade and helps the skin crisp.

Tips for the best Daing na Bangus

  1. Marinate for at least 2 hours. The longer soak gives the fish more flavor and a firmer texture.
  2. Pat the fish dry before frying. Wet fish spatters and will not crisp properly.
  3. Fry skin side down first. This crisps the skin and holds the shape of the fish.
  4. Use enough oil and medium heat. Too hot and the garlic burns before the fish cooks through.
  5. Drain on a rack. It keeps the underside crisp.

What to serve with Daing na Bangus

Serve daing na bangus for breakfast with garlic fried rice, sliced tomatoes and spiced vinegar. It is also a good lunch with steamed rice and a vegetable side.

Variations and substitutions

  • Air-fried: cook at 200 °C for about 15 minutes, turning once.
  • Other fish: use tilapia or mackerel.
  • Stuffed version: see Rellenong Bangus.
  • Spicier: add chili flakes to the marinade.

Storing and reheating

Refrigerate cooked daing for up to 2 days and reheat in a hot oven or air fryer. Marinated raw fish can be frozen for up to a month.
